Located right beside the Creston Food Market, Mexican Tacos has been quietly building a following over the last couple of months. On any given afternoon, you’ll catch the aroma of simmering birria, rich chicken tinga, and seasoned carne asada wafting across the lot.
From San Juan del Río to Creston
Brought on by owner Fabio shortly after opening, Carlos handles the day-to-day operations with a joyful smile. When asked if he’s a formally trained chef, he chuckles with modesty: "Not a registered chef, but yes."
He doesn't need a certificate hanging on the wall. The proof is right there on the plate. In a region where "Mexican food" often gets simplified into heavy, generalized burritos, Carlos brings something distinct to the Valley: unfiltered, authentic Mexican sazón.
"The idea Fabio has is to bring something truly from Mexico," Carlos explains. "And thankfully, the market is responding." Carlos comes from a medium-sized city in Querétaro called San Juan del Río.
Like many local endeavours in the Creston Valley, operations are tied to the natural rhythm of the seasons. Opening around two months ago, Mexican Tacos plans to run through October or November, depending on how the local weather and sales hold up into the cooler months.
There are big ideas floating around for expansion. Carlos speaks enthusiastically about introducing traditional enchiladas verdes y rojas, hearty chilaquiles, enmoladas, and even comforting seafood soups like caldo de pescado.
For now, though, the core menu speaks for itself. It’s simple, executed with heart, and rooted in tradition. We can attest that it is real Mexican flavour.
